Din cate am vazut .....s-a format un topic despre mancarea japoneza ....... asa ca m-am gandit sa pun si eu cate ceva . :)






Am sa incep cu o mica introducere despre "ingrediente":
DASHI este supa de baza folosita la aproape toate mancarurile. Este facuta din fulgii unui peste numit katsuo (in engleza, bonito) sau din alga konbu. Oricum este "slaba" la gust asa ca se poate foarte bine inlocui cu apa.

Ingredientele "preferate" in bucataria japoneza sunt: sosul de soia, sake-ul, mirin-ul, zaharul si miso.

Sake - este un vin din orez folosit la gatit. Se poate inlocui cu vin alb.

Mirin - este un vin dulce obtinut tot din orez. 1 lingura de mirin se inlocuieste cu 1 lingura zahar + 1 lingura sake.

Miso - pasta obtinuta din soia fermentata. Nu am sa pomenesc de ea prin retete, ca n-am idee cu ce s-ar putea inlocui.

Sosul Teriyaki - 1 lingura zahar , 2 linguri mirin (sau 2 linguri + 2 linguri vin alb) ,
2 linguri sake (sau 2 linguri vin alb) , 50 ml sos de soia






Pentru prima reteta va prezint :

- Supa miso cu legume (4-6 pers.)

1 piept de pui (fara piele) (*)
1 morcov
1-2 cartofi
1 ceapa
6 cani dashi sau apa (1200ml) - fierbinte
1-2 linguri ulei de susan (sau altul, dar nu de masline)
1 lingura sake (sau vin alb)
4 linguri pasta miso
1 lingurita sos de soia
300g tofu
ceapa verde tocata
pudra de ardei iute (togarashi) - optional

Carnea si legumele le-am taiat in bucati potrivite. Le-am calit in ulei pana ce carnea si-a schimbat culoarea. Am adaugat dashi si cand a inceput se clocoteasca am adunat spuma, am adaugat si sake-ul, am pus capacul si-am lasat pe foc mic pana s-au fiert bine legumele si carnea.




Am luat putina supa din oala si-am dizolvat in ea pasta miso. Am turnat-o peste toate din oala, am adaugat si tofu taiat cubulete si sosul de soia si-am mai lasat sa dea in 2-3 clocote.




Am trecut supa in castronele, am presarat ceapa verde si pudra de ardei...






(*) in loc de pui se poate folosi carne de vita sau de porc, fructe de mare sau peste (in cazul acesta, pestele se adauga dupa ce au fiert legumele pe jumatate) sau chiar boabe de fasole (fierte in prealabil)

Inca un bucatar, bine ai venit Micro Ice *! :)

Supa pare delicioasa, astept si pozele, imi place ca reteta e completa (ma refeream la faptul ca ai spus ca se face cu dashi, chiar daca la noi nu se gaseste :) ).

De unde ai luat tofu? Eventual daca stii firma care-l produce. Sau daca poti, pune o poza mica cu produsul. :)

Cum se prepara TOFU in 30 min :

Scuze pentru reteta in engleza dar numa asa am gasit-o si nu am avut timp sa o mai traduc . Toate cuvintele care nu le intelegeti cum ar fi (nigari) se gasesc
in : Google .


Mod de preparare :

1 1/4 - cups soybeans
800 - ml water
7 - ml liquid nigari




1. Have ready liquid measuring cup that has ml numbers and a small metric dropper (I use a dropper for measuring liquid medication for this purpose).


2. Soak dry beans in 6 cups water for at least 12 hours. Drain beans. You want to get approximately 400 grams of soaked beans. You may have leftover beans after measuring. Use extra beans for other use.


3. Divide the 400 gram beans in half. Divide 800 cc water in half.


4. Using a blender, blend the 400 gram beans with 400 cc water until very smooth, about 2-3 minutes. Put this in non-stick pot. Repeat with remaining beans and water.


5. Let the mixture come to boil stirring frequently and as soon as it comes to boil, turn down the heat to simmer. Cook, stirring frequently for 2-3 minutes. Make sure it does not burn.


6. Using a colander and a large bowl, line the colander with heavy duty cheesecloth, muslin, or cotton cloth large enough to completely cover the colander.


7. Pour in the soy milk mixture and twist close the cheesecloth, muslin, or cotton cloth. Squeeze the milk out. I use a can to help squeeze the milk out.


8. Use leftover solids or okara for other use.


9. Measure the milk. You want to have 700 cc soy milk. If not enough, add some hot water through the okara again to get 700 cc soy milk.


10. Put soy milk back into a large non-stick pot and heat until the mixture comes to 75 C or 80°C.


11. At the table (if you are serving this at table side), have ready a container approximately 5-6 inches x 4-5 inches and 4-5 inches depth. Basically you can use any small container that will be big enough to hold the milk, but not too big that tofu will not form up. You can also use round, square or oblong containers.


12. Put in 7 cc liquid nigari into the container ready for tofu. I use a liquid medicine dropper for this purpose since I do not have anything small enough to measure 7 cc.


13. Pour or dump in hot soy milk into the container with nigari. No stirring is necessary. The act of pouring in soy milk stirs the nigari enough to form the tofu. Wait 3 to 5 minutes for tofu to form.


14. You can either eat immediately or refrigerate for later use. See my description above.

Sepie marinata :



1 sepie (squid)
1/2 ardei galben
1/2 ardei rosu
6-8 masline verzi

Sos pt. marinat:
2 linguri otet
100ml ulei de masline
2 linguri sos de soia
1 lingurita wasabi ( se poate cu hrean)
Se adauga sare si piper - Dupa gust


Am taiat ardeiul si maslinele rondele.


Sepiei i-am scos osul de pe spate si-am taiat-o. (A fost congelata si gata curatata de intestine)


"Tentaculele" le-am separat unul cate unul, iar corpul l-am taiat in bucati putin dreptunghiulare pe care le-am crestat putin .

Dupa care am oparit-o.

Am amestecat bine toate ingredientele sosului, am adaugat sepia, ardeiul si maslinele si-am lasat la marinat la frigider mai mult de jumatate de ora.


Se poate servi asa sau combina (dupa se s-a marinat) cu frunze de salata, rosii...

Este de preferat sa fie in romana, forumul este totusi romanesc, chiar daca majoritatea cunosc limba engleza. Cu precizarea ca vor fi, probabil, destul de multe denumiri care vor ramane in engleza sau japoneza, mai ales in ce priveste ingredientele care nu sunt folosite curent in Europa. Daca ingredientele sunt folosite si la noi, este bine sa fie data denumirea in romana, pentru ca reteta sa fie mai usor de inteles.

Okonomyaki :D
Dupa ingrediente Romanesti




Ingrediente :

2- oua
2- linguri faina
1- lingura lapte
140 Grame - salata /sau/ varza ......... dupa preferinta
80 Grame - cartofi
30 Grame - creveti





Se foloseste sos okonomyaki sau maioneza .


Ingrediente pentru sos okonomyaki :

Kechap - 2 linguri
Sos soia - 1 lingura
Sos worcestershire - 1 lingurita ....... ( sosul se gaseste la = Real )





Mod de preparare :


Se taie marunt salata/varza , cartofii si crevetii .

Pentru a face aluatul , intr-un bol se adauga :
- oua
-lapte
-faina

Dupa aceea se adauga salata/varza ( taiate) si se amesteca .

Pe o tigaie incalzita la 180 grade .... se prajesc in ulei amestecand usor .... cartofii si crevetii .

Dupa ce s-au prajit , se scot din tigaie si adauga in bol ...... si se amesteca bine .

Dupa ce ati amestecat se adauga tot continutul bolului in tigaia cu ulei .... se intinde si se prajeste timp de 2-3 min pe fiecare parte .




Daca aveti intrebari ........ Va prezint un mic video despre cum trebuie facut .

Desii pe video ii unpic diferita reteta . :)

Va prezint o reteta japoneza din care ies 2 lucruri : B)

1. mancare - [ intre cele 2 clatite se pune pasta de fasole rosie (azuki) ]

2. desert - [ intre cele 2 clatite se poat pune : gem sau miere ]






Dorayaki :)



Ingrediente:

200gr faina
4 oua
1 lingurita praf copt
2 linguri miere
100 gr zahar
4 linguri apa


Mod de preparare:

Intr-un bol mixam ouale intregi cu zahar pana isi dubleaza volumul si se deschid la culoare. Adaugam faina treptat ca sa nu se formeze cocoloase. Adaugam si cele 2 linguri de miere si amestecam.
La sfarsit punem praful de copt dizolvat in apa, amestecam si lasam aluatul cel putin 30 minute acoperit la frigider. Umplem un polonic pe jumatate si lasam sa curga aluatul in tigaie fara sa zgaltaim tigaia(aluatul isi ia forma rotunda singur). Cand apar primele bolboroace pe suprafata clatitei intoarcem pe partea cealalta. Ambele fete trebuie sa fie netede si maronii iar bordura sa fie deschisa la culoare.

Reteta Japoneza de = RECHIN B)


Mod de preparare :



Se pun 2 linguri de ulei intr-o tigaie (la incins ) ,

Se adauga 3 catei de usturoi ( taiati marunt ) si 3 felii de ghimbir ....
dupa care se amesteca timp de 1 minut .
Se adauga 300g carne ( Rechin - falii ) ..... Urmeaza sa adaugati jumate de lingurita de zahar ,
5 linguri de apa - ( puneti apa intr-un pahar si adaugati-o toata de odata - sau riscati sa faceti artificii din ulei :P :P ) ,
1-2 lingurite sos Soia si worcestershire dupa gust .
Se amesteca pe foc mediu cam 3-4-5 minute pe fiecare parte .

Cand pestele este gata ...se mai adauga Sare si lamaie dupa gust .

A trecut ceva vreme .... dar am revenit cu alte retete :P


File De Somon - Original Japanese recipes

Ingrediente :
2 salmon filets, with skin
2 linguri - ulei masline
2 linguri - Otet de orez ( rice vinegar )
2 linguri - sos de soya
1 lingura - zahar
2 catei de usturoi taiati marunt ( minced garlic )
- piper dupa gust
cantitatea a 2 linguri - ceapa taiat marunt ( minced )

1 cana jumate - de orez ( PREFERABIL OREZ ALB CU BOB LUNG )


Mod de preparare :



Se ia fileul de somon , se cresteaza in partea opusa pielii si se adauga intr-un bol de sticla ( pentru gatit) sau intr-un castron .

Intr-un alt bol ... se amesteca : Ulei de masline , otet de orez , sos de soya , zahar , usturoi , piper si ceapa .
Dupa ce ingredientele au fost amestecate ... se toarna lichidul peste somon si se pune in frigider la marinat pentru 1 ora ,
( intorcandu-se dupa 30 min de pe o parte pe alta pentru a permite marinarea in profunzime .

Dupa 1 ora se scoate de la marinat ...
Somonul sa pune intr-o tigaie si se fierbe in sosul marinat timp de
15 minute sau pana carnea prinde o culoare rosiatica .

Intre timp , in alta oala se prepara orezul :)


Dupa ce amandoua preparate sunt gata .... se pune orezul pe un platou , Sosul ramas dupa fierbere vine pus peste orez , iar somonul deasupra .

Pentru cei care doresc sa simta aroma sosului marinat mai bine ... este indicat sa dubleze cantitatea ingredientelor
( cu exceptia uleiului : necesarul ar fi 3 linguri ) .

Odata am mancat la un restaurant Japonez in Pitesti (Sakura) care din pacate s-a inchis. Sushi . E bun dar nu foarte extraordinar.
